What gives a drink depth, body, and structure?

For the second edition of our SERIES, we focus on red cuvées, wood, and tannins. Three Wine Proxies show how differently these elements can interact.

Toasted oak, fermented herbal or tea bases, dark berries, and grape skins: tannins are created in many different ways. Wood brings spice and structure, while fruit, acidity, and fermentation shape the character of the drinks.

SERIES 002 showcases three different interpretations of red & wood – from dark berry fruit to forest herbs, to pronounced tannins and smoky spice.

The bundle contains three 750 ml bottles.

PICK #1

AMBIJUS – REAL FANTASY

Dark berries and roasted oak.

Real Fantasy from Norway combines elderberry, wild blueberries, raspberries and lingonberries with fermented Pu-Erh tea. The dark fruit brings density and richness, while the tea provides additional structure with its tannins.

Roasted oak adds a warm, spicy dimension and a slightly tart finish. Black pepper provides a subtle accent.

Juicy, dark and complex. The fruitiest of the three cuvées, with a particularly beautiful combination of berry aromas, bitterness and woody spice.

PICK #2

SIUS – PURPUR

Woody herbs, dark fruit and distinctive tannins.

PURPUR from Austria is made from a base of fermented raspberry leaves and spruce needles. Elderberry, blackcurrant and aronia add fruit and acidity. The aronia, in particular, shapes the mouthfeel with its tannins.

Oak chips add woody depth to the blend, while dandelion root contributes a slightly nutty, roasted note. Two fermentation phases combine the individual components into a multi-layered structure.

Woody, earthy and precise. Despite its pronounced tannins, PURPUR remains surprisingly light and lively.

PICK #3

CUL SEC – ROUGE EN VOITURE 2025

Grape skins, oak, and smoky spice.

For Rouge en Voiture, Cul Sec combines grapes from various European regions with fermented ingredients and botanical extracts. The maceration and fermentation of grape skins impart tannins and phenolic structure to the drink.

Oak complements the cuvée with spice and added depth. Lacto-fermented beetroot, aronia, hibiscus, and a hint of cocoa create a distinctive, earthy and spicy aromatic profile.

Full-bodied, tart, and with pronounced texture. The fine perlage provides a lively freshness that balances the dense structure.
