Three heads, one style

Behind Alter Cuvée is a well-rehearsed trio: Ina Simone Averhals is responsible for concept and cultivation, Alexander Jones for production and distillation, and Ruben Gust Jaak for design and concept. Together, the three are also behind A.I.R. Distillations, which produces non-alcoholic premium spirits for cocktail mixing using the same techniques and from the same cultivation/sourcing – two brands, one house, one shared craft.

Art of Extraction

Instead of fermenting, Alter Cuvée distills its botanicals individually and then carefully combines the essences obtained. This preserves aromas that would be lost in classic fermentation – from floral top notes to earthy, spicy base aromas. The result is an aroma architecture that can be precisely controlled: primary, secondary, tertiary, just like with wine.

Field tests

Instead of grapevines, Alter Cuvée plants herbs, spices, and flowers – cultivated on its own botanical fields rather than in vineyards. The selection of varieties, cultivation, and harvest time follow the same principles as in classic viticulture: terroir, care, and a trained sense for the right moment. This creates the basis for cuvées that, despite zero alcohol, show genuine depth and character.
