MORE THAN FERMENTED TEA - TASTING 15/05/2026
At this Deep Dive Tasting on 15.05.2026, Michael Weissenegger (founder of SIUS) and Lucas Matthies will dedicate themselves entirely to fermented tea, better known as Kombucha.
The focus will be on its diversity, because Kombucha is by no means just Kombucha. We will discuss how this beverage category originated, what distinguishes different styles, how to brew Kombucha at home, and what to look out for.
In the second part, we will delve deeper into this world with six beverages – from classic kombuchas to proxies with fermented tea as a character-defining element. Michael will share his perspective and experience as a producer directly with his own beverages in the glass.
